A hearty macaroni salad made with Early's Smoked Turkey.

1 c. elbow macaroni
1/4 diced cucumber
1 Tb. herb flavored vinegar
1/4 t. minced dill weed
1/2 c. mayonnaise
1/4 c. plain yogurt

1/2 t. dry mustard
1/2 t. salt
Dash pepper
1/4 c. sliced green onion
1 oz. diced pimento
1 c. chopped Early's Smoked Turkey
Lettuce leaves

Cook macaroni according to directions: drain. Combine cucumber, vinegar and dill weed; set aside. In small bowl, combine mayonnaise, yogurt, mustard, salt and pepper; blend. In large bowl, combine macaroni, cucumber mixture, mayonnaise mixture, green onion and pimento. Cover and chill 30 minutes. To serve, arrange lettuce leaves on plate, spoon macaroni salad on top of lettuce and top with Early's Smoked Turkey.
